Irish Soda Bread plus honey... what could be better?

Ingredients

1 T. Orange Blossom Honey

4 to 4 1/2 cups Flour

1 t. Salt
-
1 t. Baking Soda

5 T. Butter (cubed and cold)

1 3/4 cups Buttermilk (cold)

1 large Egg, beaten
-
1 cup Raisins or Currants
-
1 t. Caraway Seeds (optional)
Directions
Preheat oven to 425 degrees.
Whisk together flour, salt and baking soda.
Using a fork or your hands, work in butter until it resembles a crumble texture, then add honey and raisins.
Make a well in the center of the flour mixture and mix in the egg and cold buttermilk.
Mix until the dough is stiff.
Gently knead dough in bowl with your hands (dusted with flour). If the dough is too sticky to work with, add a little more flour. Make sure not to over-knead your dough.
Shape like a rough ball and place in greased cast-iron skillet.
Score the dough with an "X" an inch deep.
Bake until golden, about 40-45 minutes.
Remove from oven, let cool in pan for 10 minutes and then finish cooling on a rack.
